Responsibilities- Petersen Healthcare is looking to hire a full time Regional Dietitian in the central Illinois area. The Regional Dietitian is responsible for providing professional expertise in the assessment of resident’s nutritional needs and providing nutritional recommendations. Candidates will provide information and direction to the facility food service staff and assure the nutritional needs of residents are consistent with current dietary standards. This position also entails staying current with state regulations applicable to food service and sanitation. This position participates actively as a team with other regional staff members to provide support for multiple facilities and may include some travel during the day.

  • Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel and the general public
  • Must possess a general knowledge and understanding of state and federal regulations as it pertains to long term care
  • Work overtime if necessary
  • Must be a licensed dietitian within the state in which they practice
  • Food Service Sanitation Manager Certification preferred
  • Must complete all continuing education necessary to retain registration and licensing status


  • Collects, analyzes and summarizes relevant data from the resident and/or medical record, including anthropometric and laboratory information, appetite, diet orders, nutrition history, medications, and medical concerns
  • Documents all aspects of patient nutritional services in the patient medical record, following facility/department policy guidelines and governing body standards
  • Evaluates appropriateness of enteral and parenteral nutrition support, including energy, protein, and adequacy of fluid provisions. Makes necessary recommendations in a timely and professional manner
  • Evaluates the diet prescription relative to diagnosis and recommends changes, as appropriate
  • Assists in review and revision of policies and procedures relative to the nutrition care and sanitation
  • Provides in-service training programs for facility personnel, as deemed necessary
  • Assist in development of menus
  • Reviews facilities food budgets and spending of food, supplements and dietary supplies
  • Other duties as assigned by supervisor

Physical Requirements:

  • Must be able to lift objects weighing up to 25 pounds
  • Must be able to carry objects weighing up to 25 pounds
  • Must be able to push or pull objects weight up to 25 pounds
  • May be required to stoop or bend frequently throughout the day
  • Reaching and grasping with arms and hands, including reaching above shoulder level
  • Working with equipment to perform procedures where carelessness could result in minor cutes, bruises or muscle pulls
  • May be involved in stressful situations while performing job responsibilities
